Apricot balls

  • 2 dl Cashew nuts
  • 2 dl Oats
  • 4 tsp Lemon zest (optional)
  • 4 dl Dried apricots
  • 1 dl Shredded coconut
  • 2 Tablespoons Butter
  • 1 pinch Sea salt

Instructions

  • In a food processor, mix the cashew nuts into small pieces.

  • Add oats, lemon zest and apricots and pulse until it is a sticky dough.

  • Shape balls and roll in coconut.
