Apricot balls
- 2 dl Cashew nuts
- 2 dl Oats
- 4 tsp Lemon zest (optional)
- 4 dl Dried apricots
- 1 dl Shredded coconut
- 2 Tablespoons Butter
- 1 pinch Sea salt
Instructions
In a food processor, mix the cashew nuts into small pieces.
Add oats, lemon zest and apricots and pulse until it is a sticky dough.
Shape balls and roll in coconut.
